Spinach & Lentils
1 cup lentils
1/2 white onion sliced
6 cloves garlic
1 celery stalk sliced
10 oz package frozen spinach
14 oz vegetable broth
10 oz water
1 tbs Herbes de Provence
2 tbs vegetable oil
fresh ground black pepper
salt (optional)
Saute onions, garlic and celery in vegetable oil until crystallized. Add lentils, vegetable broth, water and Herbes de Provence. Bring to a full rolling boil, reduce heat and simmer for approximately 45 minutes or until lentils are soft. Thaw, strain and add spinach to mixture, simmer an additional 5-7 minutes. Remove from heat top with fresh ground black pepper and serve alone or with Jasmine rice (shown) or french bread.
Hey, what's that on the rice? Shredded carrots for texture, just as tasty with diced cucumber or firm tomato slices! This recipe usually calls for twice the onion and cumin instead of Herbes de Provence, give it a shot for some variation. Serve the variation with Jasmine rice or Naan.

Mmmmm, this looks FAB! Marble Man and I are trying to eat more vegetarian meals now that meat has gotten so expensive. I've got all these ingredients in the cupboard, so I know what I'm making for supper tonight!
